Apparently I didn\u2019t have anybody take pictures of the more businessy aspects of butchering. We\u2019re likely better off for it. :)

1st picture - Me and the first pig I raised and butchered. Delicious! Praise the lard!

I kept my pigs in the pen to the right. Pigs are seriously smart (smarter than any dog I ever met) and can be inquisitive. And do you know how clean pigs are? Seriously. They can live in tiny enclosures that get totally filthy, but that is not because of the the pig. That\u2019s the keeper\u2019s behavior. Given adequate space, pigs will always shit as far away as possible from where they eat.

That particular pig loved to climb out of her pen and did so on a regular basis. Surprised the shit out of me the first time it happened, and when it did it took me a while to find her. The next problem was how to get her home. If you think about a pig\u2019s physiology, it\u2019s not difficult to understand that you can\u2019t simply put a rope around a pig\u2019s neck and effectively pull it anywhere. (I drove down to Will Slayton\u2019s and asked him.) Here\u2019s what you do: Put a slip knot in one end of the line. Put the loop above one of the pig\u2019s back knees. Yanked on, it\u2019s quite painful and will immediately get the pig\u2019s attention.

Like I said, pigs are fucking smart. That pig continued to climb out of the pen, but I never had to actually use the rope again. She would see me walking towards her with the rope in my hand and she would just walk back to her pen. It didn\u2019t matter where she was. She\u2019d see the rope and walk home. Smarter than a bunch of fucking people.

2nd picture - Same pig, Prudence and Robin.

3rd picture - Me, the pig and Sunrise. The book he\u2019s holding is, in fact, a book on basic butchering. I likely still own it, or maybe I\u2019ve already passed it on to Eli. I thought it would make a better and somehow more interesting picture. Or maybe just more fun. There\u2019s nothing particularly technical going on at this point, so the book wasn\u2019t really necessary. What the book really helped with was actually making the cuts for particular pieces.

4th picture - L > R - Pig, Robin, Sunrise and Ted \u201cTK\u201d White. I didn\u2019t really need the book for this pig yet, but it was clearly getting more serious. I thought having it handy was a good idea given at least Sunrise and I were dumb ass city kids. Sunrise and I have known each others since we were teens. We had met Ted several years previously, but no long or deep relationship.

I think if Sunrise and Jessica had built their house, it would be visible. I think.
